Recipe: Chicken Italian Skillet

Pin It Now!
This dish smells sooooo delicious while cooking!!

1 tbs olive oil (I use cold pressed)
1 lb. boneless, skinless chicken cut into chunks
dried basil
garlic powder
3 small yellow squash, thinly sliced
2-4 cups cooked brown rice
1 tsp salt
shredded parmesan cheese (not grated)
2-4 chopped fresh roma tomatoes (any tomato will work really)

Put olive oil in skillet and add chicken. Sprinkle chicken very generously until well covered with garlic and dried basil. Cook covered over med-low heat, turning once and sprinkling again with basil and garlic. Put sliced squash on top of chicken. Cover and cook for 5 minutes or until squash is tender. (for this recipe I like the squash pretty tender) Add cooked brown rice (I use Lundberg California Brown Basmati--the kind that takes an hour to cook--not that minute stuff) and salt, stirring in. Sprinkle lots of shredded parmesan on top of the skillet full. Cover and cook just until cheese is melted, then spread tomatoes over the top. I like to leave on heat for just a few minutes so the tomatoes will be warm.

I love this healthy dish, and my boys will eat it after picking out the tomatoes and squash. Shiloh loved it too!!!

Reflections: Busyness

Pin It Now! "For most of us, our greatest fear is running out of time. So we hurry through life trying desperately to get everything done: working overtime, eating fast food in the car, racing down the freeway. In our quest to save time, we're losing something." --Luci Swindoll

Pretty in Pearls

Pin It Now!

It was so hard getting her to sit still for pictures, and my camera is slow at capturing all of her busyness!!! I took a ton, but just a few turned out. Thank you Grandma Honey for the beautiful pearls. We almost lost the bracelet--Shiloh kept taking it off and putting it in the bushes!

River Rats

Pin It Now! The boys had a blast at the river: staying up way past bedtime, tubing, swimming, and Lincoln even took a stab at kneeboarding. Mommy and Shiloh had a nice quiet weekend at home!!

Pin It Now!
Shiloh loves being chased into her room where she quickly hides underneath her crib. I love hearing her squeals of delight!

(I think this is turning more and more into a Shiloh scrapbook since I haven't had time to do her real one. =( )

Happy Fourth of July

Pin It Now!
This holiday is one of my least favorite for selfish reasons. Maybe it isn't this way everywhere, but in redneck country it seems that fireworks can be heard for at least a week. This is not very fun for someone who likes to go to sleep when the sun goes down!!!

Anyway, I am very thankful to be living in America, and pray that God continues to extend his mercy and grace to our country.

"Blessed is the nation whose God is the Lord, the people he chose for his inheritance." Psalm 33:12

Ya know, it was a toss up between Lee Greenwood's "I'm Proud to be an American" or this Diamond Rio tribute. Enjoy! Thanks Mom for the email--this was my practice at video blogging. I have got to at least try and keep up with ragamuffinwriter.
