Pumpkin Smoothie

Pin It Now!
I always anticipate the changing of the seasons with much excitement! In our household it is tradition to make all kinds of pumpkin recipes during the fall. The first one I usually whip up is a very tasty Pumpkin Smoothie, which we now lightheartedly call Pumpkin Juice! (Our fellow Harry Potter nuts will know what I am referring to.)

Pumpkin Juice (Smoothie)

15 oz. can pumpkin
1 can evaporated milk  (I have used 1 1/2 cups of raw cow's milk & it tasted great)
1 cup pineapple orange juice or plain pineapple juice
1/2-3/4 cup brown sugar
1/2 banana  (I usually throw the whole banana in)

Mix all ingredients in blender. Pour over ice. Sprinkle with cinnamon. Even more tasty--top with whipped cream then sprinkle with cinnamon!

I recently had Starbuck's Pumpkin Frap. and it was just okay. My smoothies are loads better!! And probably more healthy, too.

Sit back and enjoy this pumpkin treat while it is still warm outside!

I originally posted this Sept. 13, 2006, but I wanted to share it again for recipe link ups!! The first day of fall is Thursday, and my family and I will be enjoying these smoothies in the 100 degree desert heat!!

Also, I may try to healthify this recipe a bit more this season by using raw cow's or goat's milk and substituting honey for the brown sugar. Won't do it the first time, though, as I want them to be as delicious and wonderful as always--don't want to ruin the first day of fall for my kiddos!! :)

Note: Using pineapple orange or just pineapple juice tastes better than using plain orange juice. Makes it less tangy. I tried just plain oj once b/c I don't usually have the pineapple oj on hand, and it wasn't as tasty. Just so you know.

Hope you guys made it across the country in one piece! What a move!

You asked about the icing on Jack's cake. It is called fondant and is like edible playdough. You can buy it pre-made at Michaels or Hobby Lobby in the cake decorating section. We color it with the Wilton gel food coloring from the same section. The boys will love playing with it. I do recommend putting a layer of regular icing under the fondant to help it stick and for the flavor. The fondant tasts like candy and most people like to taste it but don't really eat it. Unless you serve it to Ed Gillentine - he loves the stuff.

I'm making a grocery list for your smoothie. Sounds delish!
