Then another thought hit me: Hey, I bet this would make a great, all-natural dye for frosting!
I saved a little beet juice and used 1/2 tsp. to make this pretty pink frosting. You can't taste the beet juice at all!! And my kids will verify this. :) (I used about 3 cups powdered sugar, a tablespoon of butter, some vanilla and a little milk)
Since this was such a success, I can't wait to try out other natural dyes like carrot and spinach. I bet even some darkly colored, bottled juice in the health food section would work, too. With the holiday season approaching, this would be a great way to keep out added chemicals while still enjoying some not-so-healthy treats.
And since I don't want to have to juice a beet every time I want a teensy bit of food coloring, I saved some and froze it as an ice cube.

That's a great color from the beets! I tried raspberries once, and the color was much lighter and I ended up over-compensating and the frosting was too liquid-y.
