Peppermint Bark Popcorn

As of last year, this recipe is a new holiday favorite. I guess it's safe to say it will be included in my Christmas baking from here on out. I am forever thankful to my sweet neighbor who introduced us to Peppermint Bark Popcorn a couple of years ago. Beware of getting instantly addicted to this festive treat!



Peppermint Bark Popcorn
  • 1/2 cup unpopped popcorn or approx. 16 cups popped corn (I don't measure once it's popped)
  • 2 cups white chocolate chips
  • 1/2 cup crushed peppermint candy canes
  • a dash of salt
  • 1-2 drops peppermint essential oil (peppermint extract would work, too)
*Pop 1/2 cup of corn kernels. Melt white chocolate chips and stir in peppermint oil. Using your largest bowl, pour popped popcorn, crushed candy canes, and melted chocolate into the bowl and gently stir coating evenly. Add sprinkles for a festive touch if you want. Pour popcorn mix onto waxed paper or foil and let harden. Break of pieces and enjoy!
~Tips~
  • I double the recipe and it turns out fine. You just need a very large bowl for stirring all the ingredients.
  • I use the small, individually wrapped candy canes. (1 box is enough for a cup of crushed candy.) I like to use the bottom of a drinking glass to crush the candy canes when they are still in their wrappers. Then I pour out all of the crushed candy into a small bowl.
  • If you use essential oil, make sure it is therapeutic grade for internal use. :)
