Works For Me Wednesday: Veggie Muffin Meatloaves

Hide lots of veggies in these little "muffins". I have also provided pictures so you can see what they are supposed to look like. You can use ground turkey or ground beef, but I will be honest-- the ground beef does taste a little better. This recipe is on my menu for tonight, and I will be using ground elk meat instead.

These sound awesome! I'm going to have to try them. They seem like they will be very yummy, and good for you, plus, I love the fun of making them in a muffin pan. My boys will love this!

We've had to start using ground turkey in place of ground beef since my daughter was diagnosed with ulcerative colitis. The turkey is easier to digest and has less saturated fats than the beef. When I do make something with ground beef I usually have to offer something else for her to eat (like canned chicken noodle soup). Anyway... we have found that we can't really tell the difference in most dishes and the ground beef turkey burgers can be very good.

I use the ground turkey too. It's a lot cheaper than hamburger and a lot less fat. These look like a great way to get vegetables into food for picky husbands too!

Very fun. You could call them "confetti muffins" from the beautiful color of the veggies. Good idea.
