This is a must spring/summer meal at our house. It's simple yet filling, and it's perfect on a hot, summer day. My hubby often requests this for his birthday or Father's Day dinner, and my oldest requested it for his 10th birthday which was almost 4 years ago. Wow!
Chicken Cheddar Wraps
Ingredients:
- 1 cup sour cream
- 1 cup chunky salsa
- 2 TBS mayo
- 4 cups cooked, cubed chicken
- 2 cups shredded cheddar cheese
- 2 cups shredded lettuce
- 1 cup guacamole, optional
- 12 flour tortillas (soft taco size)
- Tomato wedges and additional guacamole, optional
(Original recipe also calls for 1 cup thinly sliced mushrooms, but I have never included these.)
Directions:
In a bowl, combine sour cream, salsa, and mayo. Stir in chicken and cheese. Divide lettuce and guacamole between tortillas. Place about 1/2 cup chicken mixture on each tortilla. Fold sides over the filling. Garnish with extra guacamole and tomato, if desired.
I came across this recipe in Taste of Home's Quick Cooking magazine, the May/June 2000 edition. So, I've been making this recipe for a lot of summers!! :)
