Frosty Fairy Mints
Ingredients
1 3-ounce package cream cheese
2 1/2 cups powdered sugar
1/2 tsp. mint extract (I use a couple of drops of YL peppermint essential oil)
Assorted pastel food coloring
1/2 cup sugar
Directions
Mix softened cream cheese and powdered sugar with an electric mixer. Add
mint extract to dough. Knead dough until it begins to form a ball and is the
consistency of pie dough. If dough is too dry, add 1/4 tsp. water and blend into
mixture.
Divide dough into 3 equal pieces and put 2-3 drops of food coloring onto each
section. Blend colors into each portion. You can leave colors swirled or
completely blend evenly.
Pinch off about a 2-inch piece of dough and form a ball by rolling between
palms. Roll ball in sugar. Flatten out dough and cut into assorted shapes with a
small cookie cutter.

I love these! I'm a mint lover anyway. I can't wait to show them to my 20 year old. She loves sparkly desserts!! We used blue sparkling sugar with white chocolate on some strawberries for the 4th.
The recipe is super simple as well!
