Nothing says fall like a steamy cup of apple cider and a slice of deliciously moist pumpkin bread! This is definitely a fall must for us. :)
Pumpkin Bread
- 1 cup all purpose flour
- 1 cup packed brown sugar
- 1TBS baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1 cup canned pumpkin
- 1/2 cup milk
- 2 eggs
- 1/3 cup butter
- 1 cup all purpose flour
- sometimes I add about 1/2 cup to 1 cup walnuts but NEVER raisins!
*Grease bottom and 1/2 in. up the sides
of a 9x5x3-inch loaf pan; set aside. Sometimes I use several smaller pans to make more than one loaf. Great for giving away or for saving for later. :) If you use several smaller pans, the bread requires less baking time. I keep a close watch.
**In a large mixing bowl combine first
8 ingredients. Add pumpkin, milk, eggs and butter. Beat with an electric mixer
on low till blended. Beat on med/high for 2 minutes. Add the other cup of flour
and beat till blended. Fold in walnuts if desired.
Spoon batter into
prepared pan. Bake in in a 350 degree oven 60-65 minutes or till wooden
toothpick inserted near center comes out clean. Cool in pan on wire rack for 10
minutes. Remove loaf from pan and cool completely on wire rack. Wrap and store
overnight. (If you can wait that long!)
