Pixie Pancakes

Make pancakes extra special and fun for little girls! (I think my sons enjoyed them, too!)

I just used my regular pancake recipe and cut out heart and butterfly shapes--I think I may have made stars, too. To make swirly pancakes, fill a plastic bag with batter and cut off one of the corners. Squeeze curly-cue shape onto hot griddle. Be careful when flipping pancake over!!!!!

Add berries and other fruits to make them beautiful and yummy. After a generous squirt of syrup, sprinkle pancakes with "pixie dust" (powdered sugar) for that special fairy touch!!

**I use the Better Homes and Garden pancake recipe, but I tweak it just a bit. Oh, and I always double or even triple it with 3 kids eating them!

  • 1 cup all-purpose flour (I love to mix and use diff. flours. I never use just all-purpose.)
  • 1 TBSP sugar (Raw honey works, too. I just add it to the wet ingredients.)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 beaten egg
  • 1 cup milk
  • 2 TBSP cooking oil (Coconut oil is my absolute favorite!!!!)
**Stir dry ingredients together, and make a well in center. In another bowl, mix wet ingredients. If using coconut oil--mix fast so it doesn't clump up. Add egg mixture all at once to dry mixture. Stir till moistened. Lumpy batter is good. I don't measure my batter to cook the pancakes. I just get a big spoon and pour batter onto my hot skillet/griddle thing.
I love to add chopped walnuts and shredded, unsweetened coconut to my pancake batter. Mmmm.
