Zucchini Gratin

I was so glad when I happened upon this recipe in my Fry's coupon magazine. I have grown zucchini in my garden for the past 3 years, and it's just nice to make something new every now and then. I'd already baked healthy zucchini muffins and one of my favorite side dishes, cheesy zucchini saute.

And now for ZUCCHINI GRATIN, which was delicious!


You will need:

  • 5-6 medium sized zucchini
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup panko bread crumbs
  • 1 cup heavy cream
  • 2 garlic cloves, crushed
  • 3-4 sprigs fresh thyme
  • Olive oil
  • Salt and pepper to taste

Heat cream in a small saucepan with garlic and thyme just until it starts to boil. Remove. Set aside.

Slice zucchini in 1/8 in. thick rounds.

In a buttered baking dish, layer zucchini, salt, pepper, sprinkle of Parmesan cheese, panko bread crumbs, drizzle of heavy cream. Repeat layers until the pan is almost full. Finish the top with bread crumbs, Parmesan cheese and a drizzle of olive oil.

Bake at 350 for 20-30 minutes or until golden brown and bubbly. Refrigerate any leftovers. Serves 4-6. (Definitely served more than 4 at our house.)

What a great use for zucchini! My dad has been sharing his yield with us and I've been trying to come up with different recipes...I'll have to try this soon!

Zucchini Gratin? I've never had it. I wonder if my kids would try it. They turn their noses up at zucchini. Thanks for the recipe!
