My 3 ragamuffins and I are so looking forward to September 22, the first day of fall, because that's the day we make PUMPKIN SMOOTHIES!!!!! It's a nice, cold autumn treat for us desert dwellers!!

After the first day of autumn is over we start baking all kinds of other pumpkin goodness. We love pumpkin food! Even though it is still pretty warm outside in Arizona, whipping up pumpkin treats just makes us feel all autumn-ish inside. :) So, for all my fellow pumpkin lovers, here are a few more pumpkin recipes...

Pumpkin Bread
1 cup all purpose flour
1 cup packed brown sugar
1TBS baking powder
1 tsp ground cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1 cup canned pumpkin
1/2 cup milk
2 eggs
1/3 cup butter
1 cup all purpose flour
*sometimes I add about 1/2 cup walnuts but NEVER raisins!
**Grease bottom and 1/2 in. up the sides of a 9x5x3-inch loaf pan; set aside.
In a large mixing bowl combine first 8 ingredients. Add pumpkin, milk, eggs and butter. Beat with an electric mixer on low till blended. Beat on med/high for 2 minutes. Add the other cup of flour and beat till blended. Fold in walnuts if desired.
Spoon batter into prepared pan. Bake in in a 350 degree oven 60-65 minutes or till wooden toothpick inserted near center comes out clean. Cool in pan on wire rack for 10 minutes. Remove loaf from pan and cool completely on wire rack. Wrap and store overnight. (If you can wait that long!)

Mmmmm, I'm a sucker for anything pumpkin. LOVE the pumpkin cream cheese muffins at Starbucks. Rachel Ray has a pumpkin woopie pie recipe that is really good too.
